mariachismargaritas 2I have a passion for all things Mexican-the people,their food and drinks,their history,their culture(from Mayan to Toltec to Aztec and everything in between)their amazing country and all the great music that reflects their passion and fire and emotion and LIFE.This programme is dedicated to all things Mexican and is by no means definitive-thats an impossible task but this music is a “leetle Mexican” ‘Taste Of Honey’-Mexico as seen from different artiste’s perspectives-James Taylor,Linda Ronstadt,Nat King Cole,The Champs,Tito Puente,Chico O’Farrill,Los Lobos to name but a few.So get on the Mariachi Music Train and make  yourself a  margarita(or 3),kick back and listen –Spanish or Englisheeet does not matter senoras y senoritas y muchachos y caballeros,its all good and full of life.A friendly tip -when mixing Margaritas,its better to use a good tequila everytime-at least you will have a GOOD headache!!!!!

RECIPE  FOR  STU’S  GUACAMOLE

2 Large ripe avocados                                                               2 fresh coriander sprigs finely chopped

1 tablespoon finely chopped onion(i use red onions)      Fresh lime juice

1 or 2 finely chopped hot chills(the little hotties)              Salt/pepper to taste

1 large ripe tomato peeled and finely chopped

Pulp advocados  and grind up or mash with a fork,add the onion,tomato and coriander and stir in until all ingredients are well mixed,then season with lime juice and salt/pepper.

Serve immediately as guacamole will darken when left so its ‘Bueno’ to serve fresh and this recipe will serve about 6 people.

For more servings just add proportionately to the quantities and dont forget to serve this with very crisp corn chips and a Margarita or two.Enjoy !!!!
