Hawaiian Delights…Between the Covers of Chai’s Island Bistro Cookbook
On Between the Cover (29/06/2010) we visit Chai’s Island Bistro in Honolulu, Hawaii, where Chef Chai Chaowasaree lets us sit at a table of his buzzing birstro to share with us his award winning Hawaiian-fusion cuisine, the beautiful surroundings, and some of Hawaii’s greatest entertainment.
Chai’s Island Bistro is without a doubt one of Hawaii’s most incredible dining experiences, offering fresh flavorful food and outstanding Hawaiian entertainment. His own personal story and character is just as exciting, as you’ll see when you tune in for our chat with Chef Chai.
From Pan-Seared Scallops with Lobster Reduction & Linguine Zucchini, we move onto Soft-Shell Crab resting on a Miso Base – Thai born with Chinese heritage, Chai’s worldly experience is palatable.
My next mouthful offers a flavour experience of Thaiand with fresh coriander covering my tongue as the texture of crispy noodle more familiar to Chinese cuisine gives me a crunch – all whilst making a blend in my mouth that is uniquely Hawaiian – its no wonder they call Hawaii a mixing pot and the food is just one of the wonderful examples.
The diversity of Hawaii is also reflected in the entertainers. As I sit down to the scrumptious offerings from Chef Chai, Danny Couch romances diners. Born on Oahu, Hawaii, his father, Charles G. Couch, was born in Albany, Georgia, of Scottish-Irish ancestry. The U.S. Navy brought Danny’s father to the islands during the Korean War where he met and married his mother, Margaret Leilani Hauoli, a women of Hawaiian descent.
